Ingredients

1 cup unsalted butter, softened

8 oz cream cheese, softened

2 cups granulated sugar

Zest of 1 large lemon

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1 large egg

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Powdered sugar, for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Cheese: In a large mixing bowl, beat together the softened butter and cream cheese until smooth and fluffy, about 2-3 minutes.

Add Sugar and Flavors: Gradually add the granulated sugar to the mixture, continuing to beat until combined and creamy. Add the lemon zest, lemon juice, vanilla extract, and egg, mixing well until fully combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until evenly mixed.

Combine Mixtures: Slowly add the dry ingredients to the wet mixture, mixing until no flour streaks remain. The dough will be quite thick and slightly sticky.

Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes to an hour. This will make it easier to handle.

Shape Cookies: Once chilled, use a tablespoon or cookie scoop to portion the dough onto the prepared baking sheets, spacing them about 2 inches apart. The cookies will spread a little, so give them some room.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden, and the centers look set but still soft. Do not overbake, as you want to keep that gooey texture.

Cool and Dust: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, dust the tops with powdered sugar for a sweet finish.

Serve: Enjoy these delectable lemon gooey butter cookies with a glass of milk or your favorite beverage!
