Ingredients
  

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1/4 teaspoon salt

Zest of 2 lemons

1/2 cup fresh lemon juice (about 2-3 lemons)

2 cups milk

1 teaspoon vanilla extract

Powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan or a similar-sized dish.

    In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy (about 3 minutes).

      Add the eggs one at a time, mixing well after each addition. Make sure to scrape down the sides of the bowl as necessary.

        Stir in the salt, lemon zest, and lemon juice until fully combined.

          Gradually add the flour while mixing at low speed, just until no dry streaks remain.

            In a separate bowl, whisk together the milk and vanilla extract. Gradually pour this mixture into the cake batter, mixing just until combined. The batter will be thin.

              Pour the batter into the prepared baking pan. The batter will seem quite liquid, but it is meant to be that way.

                Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. The cake will rise and form a delightful top crust.

                  Cool in the pan for about 10 minutes, then carefully invert onto a serving plate. Let it cool to room temperature.

                    Dust with powdered sugar before slicing and serving. Optionally, serve with fresh berries or a dollop of whipped cream.
