For the Crust and Crumble Topping:

1 ¾ cups all-purpose flour

¾ cup granulated sugar

1 teaspoon baking powder

½ teaspoon salt

¾ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Lemon Filling:

2 large eggs

1 cup granulated sugar

¼ cup all-purpose flour

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

½ teaspoon baking powder

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper, leaving a bit of an overhang for easy removal.

    Prepare the crust: In a large mixing bowl, whisk together the 1 ¾ cups of flour, ¾ cup sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, and mix until crumbly but slightly sticky.

      Press the mixture into the pan: Reserve about 1 cup of the crumb mixture for topping. Press the remaining crumb mixture evenly into the bottom of the prepared pan. Bake for 15 minutes or until lightly golden.

        Make the lemon filling: While the crust is baking, whisk together the eggs and 1 cup of sugar in a separate bowl until smooth. Add the ¼ cup flour, fresh lemon juice, lemon zest, and baking powder. Mix until well combined.

          Pour the filling: Once the crust is done, remove it from the oven and pour the lemon filling over the baked crust, spreading it evenly.

            Add the crumble topping: Sprinkle the reserved crumb mixture evenly over the lemon filling.

              Bake again: Place the pan back in the oven and bake for an additional 20-25 minutes, or until the top is golden brown and the filling is set.

                Cool and dust: Remove from the oven and let it cool completely in the pan on a wire rack. Once cooled, if desired, dust the top with powdered sugar.

                  Slice and serve: Using the parchment overhang, lift the bars out of the pan. Cut into squares or rectangles and serve chilled or at room temperature.
