Lemon Crumb Bars

For the crust and topping:

1 ½ cups all-purpose flour

½ cup powdered sugar

¾ cup cold unsalted butter, cubed

½ cup old-fashioned oats

1 tsp baking powder

¼ tsp salt

For the lemon filling:

1 cup granulated sugar

3 large eggs

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

¼ cup all-purpose flour

½ tsp baking powder

A pinch of salt

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan and line it with parchment paper, leaving some overhang for easy removal.

    Make the crust and topping: In a medium bowl, mix together 1 ½ cups of flour, ½ cup powdered sugar, oats, baking powder, and salt.

      Cut in the butter until the mixture resembles coarse crumbs. You can use a pastry cutter or your fingers.

        Reserve 1 cup of the crumb mixture for topping and press the remaining mixture into the bottom of the prepared pan to form an even layer.

          Bake the crust in the preheated oven for about 15 minutes, or until lightly golden.

            Prepare the lemon filling: In another bowl, whisk together the sugar and eggs until smooth. Add the fresh lemon juice, lemon zest, ¼ cup flour, baking powder, and salt. Mix until well combined.

              Pour the lemon mixture over the baked crust, smoothing it out with a spatula.

                Sprinkle the reserved crumb mixture evenly on top of the lemon filling.

                  Bake again for 25-30 minutes, or until the top is set and lightly golden.

                    Allow to cool completely in the pan before lifting out with the parchment overhang and cutting into bars.

                      For serving, dust with powdered sugar if desired and enjoy the zesty delight!
