Ingredients
  

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

Zest of 1 medium lemon

1 large egg

2 tbsp freshly squeezed lemon juice

1 tsp vanilla extract

1/4 cup powdered sugar, for dusting

Instructions
 

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

    In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

      Add the lemon zest, egg, lemon juice, and vanilla extract to the creamed butter mixture. Mix until well combined.

        Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Do not overmix.

          Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm.

            Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

              Once chilled, use a tablespoon to scoop out dough balls and roll them into small balls. Roll each ball in powdered sugar to coat thoroughly.

                Place the powdered sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops have started to crack.

                    Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
