Ingredients
  

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the lemon filling:

1 cup granulated sugar

¼ cup cornstarch

½ teaspoon salt

2 cups water

4 large egg yolks

½ cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

2 tablespoons unsalted butter

For the cream topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Lemon slices and zest for garnish

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the crust:

      - In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract.

        - Stir until well combined and crumbly.

          - Press the mixture firmly into the bottom of a greased 9x9-inch (or similar) baking pan.

            - Bake in the preheated oven for 10 minutes until golden. Remove and let cool.

              Make the lemon filling:

                - In a medium saucepan, whisk together sugar, cornstarch, and salt.

                  - Gradually add water while whisking to avoid lumps. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble (about 5-7 minutes).

                    - In a separate bowl, lightly beat the egg yolks. Slowly add a bit of the hot mixture to the yolks, whisking constantly to temper.

                      - Return the yolk mixture to the saucepan, then stir in the lemon juice, lemon zest, and butter.

                        - Continue cooking for another 1-2 minutes until fully thickened.

                          Combine and set:

                            - Pour the lemon filling over the cooled crust, spreading it evenly.

                              - Allow it to cool at room temperature for 15 minutes, then refrigerate for at least 2 hours or until fully set.

                                Prepare the cream topping:

                                  - In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.

                                    Assemble the bars:

                                      - Once the lemon filling is set, spread the whipped cream over the top evenly.

                                        - Garnish with lemon slices and additional lemon zest for a decorative touch.

                                          Slice and serve:
