1 pound large sea scallops, cleaned and patted dry

3 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

Salt and freshly ground black pepper, to taste

1 tablespoon fresh parsley, finely chopped (for garnish)

Lemon wedges, for serving

Prep the Scallops: Ensure the scallops are dry by patting them with paper towels. This will help them sear nicely.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

      Cook the Scallops: Season the scallops lightly with salt and pepper. Place them in the hot pan, ensuring they are not overcrowded. Cook for about 2-3 minutes on one side until a golden crust forms. Flip the scallops and cook for another 2 minutes until they are opaque throughout. Remove scallops from the pan and set aside.

        Make the Lemon Butter Sauce: In the same skillet, lower the heat to medium. Add the butter and allow it to melt. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Then, add the lemon juice and zest, stirring to combine.

          Combine and Serve: Return the scallops to the skillet, tossing them gently in the lemon butter sauce to coat. Cook for an additional minute to warm through.

            Garnish: Remove the pan from heat, garnish with freshly chopped parsley, and serve with lemon wedges on the side.
