Ingredients

1 cup unsalted butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

Zest of 1 lemon

2 tablespoons lemon juice

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh blueberries (or frozen, if out of season)

1/2 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Brown the Butter: In a medium saucepan, melt the butter over medium heat. Continue cooking, stirring frequently, until the butter is foamy and turns a deep golden brown, about 5-7 minutes. Watch closely to prevent burning. Remove from heat and let it cool slightly.

Mix Sugars and Eggs: In a large bowl, combine the browned butter with brown sugar and granulated sugar. Whisk together until well combined. Add the eggs, one at a time, whisking until fully incorporated. Stir in vanilla extract, lemon zest, and lemon juice.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt until evenly mixed.

Incorporate Dry into Wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the blueberries and white chocolate chips, if using.

Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps the flavors meld and improves the texture of the cookies.

Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press down slightly to flatten the tops.

Bake: Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft. They will continue to firm up as they cool.

Cool and Serve: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar before serving if desired.
