Ingredients
  

1 box of lemon-flavored graham crackers (about 14-16 crackers)

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

Zest of 2 lemons

1 cup fresh strawberries, sliced

1 cup fresh raspberries

1 cup fresh blueberries

1 lemon, juiced

Extra berries and lemon slices for garnish

Instructions
 

Prepare the Cream Mixture: In a large mixing bowl, whip the heavy cream using an electric mixer on medium speed until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Gently fold in the lemon zest and lemon juice until well combined.

    Assemble the Cake: On the bottom of a 9x13 inch baking dish, lay a single layer of graham crackers, breaking them if necessary to fit. Spread a generous layer of the lemon cream mixture over the crackers, smoothing it out with a spatula.

      Add the Berries: Evenly distribute some of the sliced strawberries, raspberries, and blueberries on top of the cream layer.

        Repeat Layers: Repeat the layering process with another layer of graham crackers, followed by more lemon cream, and then the scattered berries. You can create 2-3 layers depending on your ingredients and dish size, finishing with the lemon cream on top.

          Chill: Cover the dish with plastic wrap and refrigerate for at least 4-6 hours, or overnight if possible. This allows the graham crackers to soften and the flavors to meld beautifully.
