Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef or Italian sausage

1 can (28 ounces) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried oregano

2 teaspoons dried basil

1/2 teaspoon red pepper flakes (optional)

8 ounces lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

In a large soup pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef or sausage to the pot. Cook, breaking it apart with a wooden spoon, until browned and cooked through. Drain excess fat if necessary.

        Incorporate the crushed tomatoes, chicken or vegetable broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste. Bring the mixture to a simmer.

          Add the broken lasagna noodles to the pot, and cook according to the package instructions, usually about 8-10 minutes, until the noodles are tender.

            In a separate bowl, mix the ricotta cheese with a pinch of salt and pepper to season.

              Once the noodles are cooked, ladle the soup into bowls, and dollop with a spoonful of the seasoned ricotta cheese.

                Top each serving with shredded mozzarella and a sprinkle of Parmesan cheese.

                  Garnish with fresh basil or parsley before serving for an extra burst of flavor.
