Lasagna Soup

1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried basil

2 teaspoons dried oregano

1 tsp red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley or basil for garnish

Salt and pepper to taste

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the ground beef or sausage and cook until browned. Drain any excess fat, then add the onions. Sauté for about 3 minutes, until softened.

    Stir in the garlic and cook for an additional 30 seconds until fragrant.

      Pour in the crushed tomatoes, chicken broth, basil, oregano, and red pepper flakes (if using). Bring the mixture to a simmer.

        Add the broken lasagna noodles to the pot, cover, and cook for about 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.

          Once the noodles are cooked, stir in the ricotta cheese until well combined. Season with salt and pepper to taste.

            Serve the soup hot, topped with shredded mozzarella and grated Parmesan cheese. Garnish with fresh parsley or basil for a touch of color and flavor.

              For an extra cheesy experience, you can broil the soup for a few minutes after serving to melt the cheese on top.
