Ingredients

1 pound kielbasa sausage, sliced into 1/4-inch rounds

1 bell pepper (any color), sliced into strips

1 medium red onion, cut into wedges

2 cups baby potatoes, halved

2 cups broccoli florets

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare the Vegetables: In a large bowl, combine the sliced bell pepper, red onion wedges, halved baby potatoes, and broccoli florets.

Season the Ingredients: Drizzle the vegetables with olive oil, then sprinkle with garlic powder, smoked paprika, Italian herbs, and a pinch of salt and pepper. Toss everything together until the veggies are evenly coated.

Add the Kielbasa: Add the sliced kielbasa to the bowl and mix gently to combine with the seasoned vegetables.

Spread on the Sheet Pan: Transfer the mixture to the prepared baking sheet, spreading it out in an even layer to ensure even cooking.

Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is browned and heated through.

Garnish and Serve: Once done, remove from the oven and sprinkle with fresh parsley before serving. Enjoy your effortless Kielbasa & Veggie Delight hot from the oven!
