Ingredients
  

1 cup shredded unsweetened coconut, plus extra for rolling

1 cup almond flour

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup mini chocolate chips (optional)

Instructions
 

In a large mixing bowl, combine the shredded coconut and almond flour. Mix well until they're fully incorporated.

    Add the honey (or maple syrup), melted coconut oil, vanilla extract, and salt to the dry ingredients. Stir until everything is well combined and forms a thick, sticky dough.

      If you’re using chocolate chips, gently fold them into the mixture now.

        Use your hands to form the mixture into small, bite-sized balls, about 1 inch in diameter.

          Roll each ball in the extra shredded coconut to coat them evenly.

            Place the coated balls on a baking sheet lined with parchment paper.

              Once all balls are formed and coated, place them in the refrigerator for at least 30 minutes to firm up.

                After chilling, you can enjoy your No Bake Coconut Cream Balls right away or store them in an airtight container in the fridge for up to a week.
