Ingredients
  

4 large eggs (separated)

1/2 cup cream cheese, softened

1/4 cup almond flour

1/4 cup powdered erythritol (or other keto-friendly sweetener)

1 tsp vanilla extract

1/2 tsp baking powder

Pinch of salt

Fresh berries (optional, for garnish)

Whipped cream (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

    Prepare Egg Whites: In a clean, dry mixing bowl, beat the egg whites with a pinch of salt until stiff peaks form. This will take about 3-5 minutes with an electric mixer.

      Mix Cream Cheese: In a separate bowl, mix the softened cream cheese, egg yolks, almond flour, powdered erythritol, vanilla extract, and baking powder together until smooth and creamy.

        Combine Mixtures: Gently fold about one-third of the beaten egg whites into the cream cheese mixture to lighten it. Once incorporated, fold in the remaining egg whites gently, being careful not to deflate them.

          Shape the Cake: Using a spatula, spread the batter onto the lined baking sheet, shaping it into a round or rectangular layer about 1 inch thick.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Cool: Once baked, remove the cake from the oven and let it cool completely on the baking sheet before carefully transferring it to a wire rack.

                Serve: Slice the cloud cake and serve it plain, or top with whipped cream and fresh berries if desired.
