The sandwich typically consists of a creamy egg salad made from finely chopped hard-boiled eggs, mayonnaise, and seasoning, all tucked between two slices of soft, fluffy bread. Japanese Egg Sandwich (Tamago Sando)

Ingredients
  

4 large eggs

2 tablespoons mayonnaise (preferably Japanese mayo)

1 teaspoon Dijon mustard (optional)

Salt and black pepper to taste

1 teaspoon soy sauce (optional)

4 slices of soft white bread

1 tablespoon unsalted butter, softened

Fresh chives or green onions, finely chopped (for garnish)

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot, turn off the heat, and let it sit for 10-12 minutes. After this time, transfer the eggs to a bowl of ice water to cool completely.

    Prepare the Filling: Once the eggs are cool, peel them and chop them coarsely. In a mixing bowl, combine the chopped eggs with mayonnaise, Dijon mustard (if using), soy sauce (if using), salt, and pepper. Mix gently until the ingredients are well combined but the eggs remain chunky.

      Assemble the Sandwich: Spread a thin layer of softened butter on one side of each slice of bread. Place two slices of bread buttered side down on a clean surface. Spoon a generous amount of the egg mixture onto the bread slices and spread it out evenly. If desired, sprinkle some finely chopped chives or green onions over the filling.

        Close the Sandwich: Place the remaining slices of bread on top of the egg mixture, buttered side up. Press down gently.

          Slice and Serve: Carefully slice the sandwiches in half diagonally or into quarters. Serve immediately, or wrap them in plastic wrap and refrigerate for a refreshing treat later.
