4 slices of thick-cut bread (like sourdough or ciabatta)

2 tablespoons unsalted butter, softened

8 ounces cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

2-3 fresh jalapeños, finely chopped (remove seeds for less heat)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Optional: 1/4 cup crumbled bacon for added crunch

Optional: fresh cilantro or parsley for garnish

Instructions
 

Prepare the Jalapeño Mixture:

    - In a mixing bowl, combine the softened cream cheese, shredded cheddar, pepper jack cheese, chopped jalapeños, garlic powder, onion powder, salt, and pepper. If using, mix in the crumbled bacon. Stir until well combined.

      Assemble the Sandwiches:

        - Take two slices of bread and spread a generous portion of the jalapeño cheese mixture on one slice of each. Top with another slice of bread, creating two sandwiches.

          Butter the Bread:

            - Spread the softened butter on the outside of each sandwich to ensure a golden, crispy crust when grilled.

              Grill the Sandwiches:

                - Heat a non-stick skillet or griddle over medium heat. Carefully place the sandwiches in the pan. Cook for 3-4 minutes on one side until golden brown, then carefully flip the sandwiches using a spatula.

                  Cooking the Other Side:

                      Serve:
