4 Italian sausages (mild or spicy, based on preference)

2 tablespoons olive oil

1 large yellow onion, thinly sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper to taste

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish

Sub rolls or crusty Italian bread for serving

Prepare the Sausages: In a large skillet over medium heat, add the olive oil. Once hot, place the Italian sausages in the skillet and brown them on all sides (about 6-8 minutes). Once browned, remove them from the skillet and set aside on a plate.

    Sauté the Vegetables: In the same skillet, add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they start to soften and caramelize. Stir occasionally to ensure even cooking.

      Add Garlic and Herbs: Once the peppers and onions are tender, add the minced garlic, oregano, basil, and crushed red pepper flakes (if using). Cook for another 2 minutes until fragrant.

        Combine sautéed vegetables and sausages: Slice the browned sausages into bite-sized pieces and return them to the skillet. Stir well to combine. Add salt and pepper to taste, and drizzle balsamic vinegar over the mixture.

          Simmer: Reduce the heat to low and let everything simmer together for about 5 more minutes so the flavors meld.
