Ingredients
  

2 cups all-purpose flour

1 cup unsalted butter, softened

1/2 cup sugar

1 egg yolk

1 tsp vanilla extract

1/4 tsp salt

1 cup finely chopped nuts (walnuts or hazelnuts work well)

1/2 cup powdered sugar (for dusting)

Instructions
 

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

    Add the egg yolk and vanilla extract to the mixture, and continue to mix until well combined.

      Gradually sift in the flour and salt, mixing until a soft dough forms.

        Divide the dough into two equal portions, wrap in plastic wrap, and chill in the refrigerator for about 1 hour.

          Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

            On a lightly floured surface, roll out one portion of the dough to about 1/8 inch thick.

              Sprinkle half of the finely chopped nuts evenly over the rolled-out dough.

                Starting from one edge, carefully roll the dough up into a tight log, pinching the ends to seal.

                  Repeat the rolling and nut-sprinkling process with the second portion of dough.

                    Slice each log into 1-inch thick cookies and place them on the prepared baking sheet, spacing them a few inches apart.

                      Bake for 12-15 minutes, or until lightly golden on the edges.

                        Once cooled, lightly dust the cookies with powdered sugar before serving.
