2 medium zucchinis, grated

1 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 large egg, beaten

1/4 cup fresh parsley, chopped

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/4 cup olive oil (for frying)

Optional: Fresh lemon wedges for serving

Instructions
 

Begin by preheating your oven to 400°F (200°C) if you prefer to bake the bites instead of frying.

    In a large bowl, combine the grated zucchini with a sprinkle of salt and let it sit for about 10 minutes to drain excess moisture. After 10 minutes, squeeze the zucchini to remove any remaining liquid.

      To the bowl of zucchini, add breadcrumbs, Parmesan cheese, minced garlic, beaten egg, chopped parsley, Italian seasoning, salt, and pepper. Mix until all ingredients are well combined.

        If baking, line a baking sheet with parchment paper. Form the zucchini mixture into small patties and place them on the baking sheet. Drizzle with olive oil or spray with cooking spray.

          Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the bites are golden brown and crispy.

            If frying, heat olive oil in a large skillet over medium heat. Once the oil is hot, add the zucchini bites in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

              Once cooked, remove the bites from the heat and place them on a paper towel-lined plate to absorb any excess oil.

                Serve warm with fresh lemon wedges on the side for an extra burst of flavor.
