Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 pint cherry tomatoes, halved

1 cup baby spinach

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 lemon, sliced

Fresh basil leaves (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Season the Salmon: Pat the salmon fillets dry with paper towels. In a small bowl, mix the garlic powder, onion powder, oregano, and basil. Season both sides of the salmon fillets with salt, pepper, and the spice mixture.

Prepare the One-Pan Base: In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the halved cherry tomatoes and sauté for 3-4 minutes until slightly softened. Add the baby spinach and cook for another 2 minutes until wilted.

Create the Cream Sauce: Lower the heat, then add the heavy cream and grated Parmesan cheese to the skillet. Stir well, allowing the cheese to melt and the mixture to become combined and creamy. Taste and adjust seasoning if necessary.

Add the Salmon: Gently push the tomato and spinach mixture to the sides of the pan and nestle the seasoned salmon fillets in the center. Top each fillet with a lemon slice.

Bake: Transfer the skillet to the preheated oven and bake for about 15-18 minutes or until the salmon is cooked through and flakes easily with a fork.

Serve: Remove the skillet from the oven and let it rest for a couple of minutes. Garnish with fresh basil leaves before serving.

Enjoy: Serve this Tuscan Marry Me Salmon with a side of crusty bread or over a bed of fluffy rice or pasta to soak up the delightful creamy sauce.
