1.5 lbs (680g) boneless, skinless chicken thighs

1/2 cup sweet chili sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice (about 1 lime)

Salt and pepper, to taste

2 tablespoons vegetable oil, for cooking

1/4 cup green onions, chopped (for garnish)

2 tablespoons sesame seeds (for garnish)

Optional: fresh cilantro leaves for garnish

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, lime juice, salt, and pepper. Whisk well to combine.

      - Add the chicken thighs to the marinade and ensure that they are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

        Prepare the Cooking Area:

          - Heat the vegetable oil in a large skillet over medium-high heat. Make sure the oil is hot before adding the chicken to achieve a nice sear.

            Cook the Chicken:

              - Remove the chicken from the marinade, letting the excess drip off. Reserve the marinade for basting later.

                - Place the chicken thighs in the hot skillet, ensuring they are not overcrowded. Cook for about 5-7 minutes on each side, or until they are golden brown and fully cooked (internal temperature should reach 165°F / 75°C).

                  Baste for Flavor:

                    - During the last couple of minutes of cooking, pour the reserved marinade over the chicken and allow it to simmer for another 2-3 minutes. This will glaze the chicken and enhance its flavor.
