Ingredients

1 cup unsalted butter, softened

¾ cup powdered sugar

2 cups all-purpose flour

½ teaspoon salt

1 teaspoon vanilla extract

½ cup raspberry jam (preferably seedless)

¼ cup fresh raspberries (optional for garnish)

Extra powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Shortbread Dough: In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy. This should take about 3-4 minutes.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually mix the dry ingredients into the butter and sugar mixture until just combined.

Add Vanilla: Stir in the vanilla extract until fully incorporated. Your dough should be soft but not overly sticky.

Chill the Dough: Divide the dough into two equal portions. Wrap each portion in plastic wrap and refrigerate for about 30 minutes to firm up.

Prepare the Raspberry Swirl: While the dough is chilling, in a small bowl, mix the raspberry jam with a handful of fresh raspberries, gently crushing them to create a swirl effect.

Roll Out the Dough: On a lightly floured surface, roll out one portion of chilled dough to about ¼-inch thickness. Use a cookie cutter to cut out desired shapes.

Add the Raspberry Swirl: Spread a thin layer of the raspberry jam mixture over the cookie cutouts. Then, roll out the second portion of dough and place over the jam layer, gently pressing down to seal.

Cut the Cookies: Using the cookie cutter again, cut out your cookies. For an added effect, twist the cutter slightly to create a beautiful swirl pattern while cutting.

Bake: Place the cookies on the prepared baking sheet, spacing them about 1-2 inches apart. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Finishing Touch (Optional): Once cooled, dust the cookies with extra powdered sugar and garnish with additional fresh raspberries if desired.

Enjoy your delicious Irresistible Raspberry Swirl Shortbread Cookies!
