Ingredients
  

4 cups all-purpose flour

1 packet (2 1/4 tsp) instant yeast

1 1/2 teaspoons salt

2 tablespoons granulated sugar

1 1/2 cups warm water (110°F)

4 tablespoons unsalted butter, melted

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 cup mozzarella cheese, cut into small cubes

1/4 cup grated Parmesan cheese

1/4 cup baking soda

1 large egg, beaten (for egg wash)

Sea salt for sprinkling

Extra rosemary for garnishing

Instructions
 

Prepare the Dough:

    In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy. Then, add the melted butter, salt, and chopped rosemary. Gradually stir in the flour until a soft dough forms.

      Knead the Dough:

        Transfer the dough to a lightly floured surface and knead it for about 5-7 minutes, until the dough is smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it doubles in size.

          Preheat & Prepare the Baking Soda Bath:

            Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper. In a large pot, bring 10 cups of water to a boil, then dissolve the baking soda in the boiling water.

              Shape the Pretzels:

                Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches long). Shape the rope into a U, then twist the ends together to form a pretzel shape. Before finishing the twist, place a mozzarella cube in the center and seal the pretzel by pinching the ends together.

                  Boil & Bake:

                    Carefully place each pretzel in the boiling baking soda bath for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets. Brush the tops with beaten egg and sprinkle with sea salt and Parmesan cheese.

                      Bake:

                        Bake the pretzels in the preheated oven for 12-15 minutes, or until they are golden brown.

                          Garnish & Serve:

                            Once baked, let them cool slightly, then garnish with extra rosemary if desired. Serve warm with marinara sauce or garlic butter for dipping.
