Ingredients
  

1 lb (450g) ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups beef broth

1 can (15 oz) tomato sauce

2 tsp Italian seasoning

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, brown the ground beef or Italian sausage over medium heat until fully cooked. Drain excess fat if necessary.

    Add the chopped onion and garlic to the pot, cooking until softened, about 3-4 minutes.

      Stir in the crushed tomatoes, beef broth, tomato sauce, Italian seasoning, dried basil, and red pepper flakes (if using). Bring to a simmer.

        Once simmering, add the broken lasagna noodles, stirring to combine. Cook for 10-12 minutes, or until the noodles are tender.

          In a separate bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper.

            Once the noodles are cooked, ladle the soup into bowls and place a generous dollop of the ricotta mixture in the center of each bowl.

              Top with remaining mozzarella and Parmesan cheese.

                Garnish with fresh parsley before serving. Enjoy your delicious lasagna soup!
