1.5 lbs boneless, skinless chicken breasts

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup diced tomatoes (canned, with juice)

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

4 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional, for heat)

1 teaspoon salt

½ teaspoon black pepper

1 cup uncooked pasta (e.g., penne or fusilli)

Fresh basil, for garnish

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the crockpot.

    Add the Veggies: Sprinkle the chopped onion, diced celery, diced carrots, and minced garlic over the chicken.

      Pour in the Liquids: Add the chicken broth, diced tomatoes (with their juice), and heavy cream to the slow cooker. Stir in the Italian seasoning, crushed red pepper flakes, salt, and black pepper to season the soup.

        Cook: Cover the crockpot with the lid and set it on low heat for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

          Shred the Chicken: Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken back to the crockpot.

            Add the Cheese and Pasta: Stir in the grated Parmesan cheese and uncooked pasta into the soup. Cover again and cook on high for an additional 30 minutes, or until the pasta is tender.

              Serve: Ladle the creamy soup into bowls and garnish with fresh basil and extra Parmesan cheese, if desired.
