Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet over medium-high heat, combine the butter and olive oil. Once the butter is melted and bubbling, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

Cook the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce: In the same skillet, pour in the white wine, lemon juice, and lemon zest. Bring to a simmer, scraping up any bits stuck to the bottom. Let it reduce for about 2-3 minutes until slightly thickened.

Combine: Return the cooked shrimp to the skillet. Toss in the drained pasta, adding a splash of the reserved pasta water if needed to loosen the sauce. Stir well to combine, allowing the pasta to absorb the flavors.

Finish and Serve: Remove from heat and stir in the fresh parsley. Adjust seasoning with salt and pepper if needed. Serve immediately topped with freshly grated Parmesan cheese.
