½ cup unsalted butter (plus extra for greasing)

1 cup dark chocolate (at least 70% cocoa), chopped

2 large eggs

2 large egg yolks

½ cup granulated sugar

2 teaspoons vanilla extract

¼ cup all-purpose flour

A pinch of salt

Cocoa powder (for dusting)

Optional: Ice cream or whipped cream for serving

Instructions
 

Preheat your oven to 425°F (220°C). Grease four ramekins generously with butter and dust with cocoa powder, shaking out any excess.

    In a microwave-safe bowl, combine the unsalted butter and chopped dark chocolate. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and completely melted.

      In a separate mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until pale and slightly thickened.

        Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to combine.

          Gently fold in the all-purpose flour and pinch of salt until just incorporated. Be careful not to overmix.

            Divide the batter equally among the prepared ramekins, filling each about ¾ full.

              Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

                Remove the lava cakes from the oven and let them rest for 1 minute. Carefully invert each ramekin onto individual serving plates and gently tap to release the cakes.

                  Serve warm, and if desired, top with a scoop of ice cream or a dollop of whipped cream for an extra decadent touch.
