2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 teaspoon Italian seasoning

4 slices of fresh mozzarella cheese

1 large tomato, sliced

Fresh basil leaves (about 10-12 leaves)

4 ciabatta rolls or panini bread

Balsamic glaze, for drizzling

1 tablespoon pesto (optional)

1 tablespoon butter, softened (for grilling)

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until it’s fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing it thinly.

    Assemble the Panini: Preheat a panini press or a skillet (if you don’t have a press). Cut the ciabatta rolls in half. On the bottom half of each roll, layer sliced chicken, mozzarella cheese, tomato slices, fresh basil leaves, and a drizzle of balsamic glaze. If desired, spread pesto on the top half before placing it on the sandwich.

      Grill the Sandwiches: Butter the outer sides of each ciabatta roll. Place the sandwiches on the panini press, or if using a skillet, place them in the skillet and press down with a spatula. Cook until the bread is golden brown and crispy, and the cheese is melted—about 3-4 minutes in the press or 5-7 minutes in the skillet, flipping halfway through.

        Serve: Once browned and gooey, remove the panini from the heat. Slice in half and serve warm, drizzled with extra balsamic glaze if desired.
