Ingredients
  

6 slices of Irish bacon or pancetta, diced

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

2 cups green cabbage, shredded

1 cup heavy cream

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, cook the diced Irish bacon over medium heat until it's crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.

    Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, approximately 3-4 minutes.

      Stir in the diced potatoes and cook for another 5 minutes, allowing them to absorb some of the bacon flavor.

        Pour in the broth and add the shredded cabbage and dried thyme. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

          Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest intact.

            Stir in the heavy cream and season with salt and black pepper to taste. Add the reserved bacon back into the soup.

              Heat through until the soup is hot but not boiling. Serve warm, garnished with fresh parsley.
