Iowa Party Bites

Ingredients
  

1 lb small baby potatoes, halved

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup sour cream

2 green onions, finely chopped

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until tender but still firm. Drain and let cool slightly.

      While the potatoes cool, in a mixing bowl, combine the shredded cheddar cheese, crumbled bacon, sour cream, chopped green onions, garlic powder, paprika, salt, and pepper. Mix until everything is well combined.

        Once the potatoes are cool enough to handle, scoop out a small portion from the center of each half to create a little cavity for the filling.

          Fill each potato half with the cheese and bacon mixture, heaping it generously.

            Place the filled potato halves on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

              Remove from the oven and garnish with fresh parsley before serving.
