Ingredients
  

2 pounds boneless, skinless chicken thighs

1 cup long-grain white rice (rinsed)

1 small onion, diced

4 cloves garlic, minced

2 cups chicken broth

1 cup frozen peas and carrots mix

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: Set your Instant Pot to the sauté function and add olive oil. Once hot, season the chicken thighs with salt, pepper, and paprika. Brown the chicken on both sides for about 5-6 minutes, then remove and set aside.

    Cook Aromatics: In the same pot, add the diced onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Deglaze the Pot: Pour in a splash of chicken broth to deglaze, scraping up any browned bits from the bottom of the pot.

        Add Rice and Broth: Stir in the rinsed rice, thyme, and the remaining chicken broth. Place the browned chicken thighs on top of the mixture.

          Pressure Cook: Close the lid of the Instant Pot, ensure the pressure valve is sealed, and set it to cook on high pressure for 10 minutes.

            Natural Release: After the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully use the quick release to release any remaining pressure.

              Add Vegetables: Once safe to open the lid, carefully remove the chicken and set aside. Stir in the frozen peas and carrots mix, and let it sit for a few minutes until warmed through.

                Serve: Fluff the rice with a fork, then return the chicken to the pot to combine. Garnish with fresh parsley before serving.
