Instant Pot Chicken Alfredo Pasta

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cubed

8 oz (225g) fettuccine pasta

2 cups (475ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: Turn the Instant Pot on to ‘Sauté’ mode. Add olive oil and let it heat. Add the cubed chicken, season with salt, pepper, and Italian seasoning, and sauté until browned, about 5-7 minutes. Remove the chicken and set aside.

    Sauté the Garlic: In the same pot, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

      Deglaze the Pot: Pour in the chicken broth to deglaze the pot, scraping up any browned bits from the bottom. This adds flavor to the dish.

        Add Pasta and Chicken: Break the fettuccine in half and add it to the pot. Layer the sautéed chicken on top without stirring. This helps to keep it on a flat surface.

          Pressure Cook: Close the lid, set the valve to ‘Sealing’, and select ‘Manual’ or ‘Pressure Cook’ mode. Cook on high pressure for 8 minutes.

            Quick Release: Once the cooking time is up, perform a quick release by carefully switching the valve to ‘Venting’.

              Stir in Cream and Cheese: Open the lid and stir in the heavy cream and Parmesan cheese until melted and creamy. If necessary, adjust seasoning with salt and pepper.

                Serve: Spoon the pasta onto plates, garnish with chopped parsley, and enjoy your creamy chicken Alfredo!
