Ingredients
  

2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced

2 cups beef broth

1 cup red wine (optional, can replace with beef broth)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup frozen peas (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: Turn your Instant Pot to the 'Sauté' setting. Add the olive oil and let it heat up. Season the beef cubes generously with salt and pepper. In batches, brown the beef cubes on all sides (about 6-7 minutes per batch). Remove the beef and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Deglaze the Pot: Pour in the red wine (if using) or one cup of beef broth, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 2-3 minutes.

        Combine Ingredients: Return the beef to the pot. Add the carrots, potatoes, remaining beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir well to combine.

          Pressure Cook: Close and seal the Instant Pot lid. Select the 'Manual' or 'Pressure Cook' setting, adjust the timer to 35 minutes on high pressure.

            Release the Pressure: Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 10 minutes, then carefully perform a quick release to remove any remaining pressure.

              Finish Up: Remove the bay leaf from the stew. If desired, stir in the frozen peas and let them heat through for a few minutes before serving. Adjust seasoning with salt and pepper to taste.

                Serve: Ladle the beef stew into bowls and garnish with fresh chopped parsley. Enjoy your comforting and delicious meal!
