Ingredients

For the Cookies:

1 cup unsalted butter, softened

2/3 cup powdered sugar

1 tablespoon dried culinary lavender

1 tablespoon lemon zest (about 1 lemon)

2 cups all-purpose flour

1/4 teaspoon salt

For the Icing:

1 1/2 cups powdered sugar

2 tablespoons lemon juice

1 tablespoon milk (or more for desired consistency)

A few drops of purple food coloring (optional)

Instructions

Preheat & Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream Butter & Sugar: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.

Add Flavors: Gently crush the dried lavender with your fingers to release its aroma, then mix it into the butter mixture along with the lemon zest.

Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the butter mixture, stirring until combined. The dough will be soft and a little crumbly; that's okay!

Shape the Cookies: Use your hands to bring the dough together. Roll it out on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.

Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Be careful not to overbake them! Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Make the Icing: In a small bowl, whisk together the powdered sugar, lemon juice, and milk until smooth. If you'd like to add color for a fun touch, stir in a few drops of purple food coloring.

Ice the Cookies: Once the cookies are completely cooled, drizzle or spread the icing over the top of each cookie. Allow the icing to set before serving.

Serve & Enjoy: Decorate with additional lavender flowers if desired and enjoy your beautifully iced lemon lavender shortbread cookies with a cup of tea!
