Ingredients

4 large bone-in, skin-on chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon smoked paprika

1 teaspoon salt

½ teaspoon freshly ground black pepper

Juice of 1 lemon

Zest of 1 lemon

1 cup chicken broth

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine the minced garlic, rosemary, thyme, smoked paprika, salt, pepper, lemon juice, and zest. Add the chicken thighs and coat them well with the marinade. Let them sit for at least 30 minutes (or refrigerate for up to 4 hours for deeper flavor).

Preheat the Oven: Preheat your oven to 425°F (220°C).

Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the marinated chicken thighs skin-side down. Sear for about 4-5 minutes until golden brown and crispy. Flip them over and sear the other side for another 2-3 minutes.

Add Broth and Butter: Pour the chicken broth into the skillet, making sure not to wash away the delicious bits at the bottom. Add the butter to the broth for extra richness.

Roast in the Oven: Transfer the skillet to the preheated oven. Roast for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is beautifully crispy.

Rest and Serve: Remove the skillet from the oven and let the chicken rest for about 5 minutes. This helps the juices redistribute. Garnish with freshly chopped parsley before serving.

Enjoy: Serve the chicken thighs hot with the pan juices drizzled on top. Pair it with roasted vegetables or a simple salad for a complete meal.
