1 lb salmon fillet, skin removed and cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup hot honey (store-bought or homemade)

1 tablespoon soy sauce

1 teaspoon lime juice

Fresh parsley, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Salmon: In a bowl, combine the hot honey, soy sauce, lime juice, garlic powder, smoked paprika, salt, and pepper. Add the salmon cubes and gently toss to coat. Let it marinate for about 15-20 minutes.

    Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Prepare the Salmon Bites: Using a slotted spoon, remove the salmon from the marinade and place the cubes on the prepared baking sheet. Reserve the remaining marinade for later.

        Bake the Salmon: Drizzle olive oil over the salmon bites and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Glaze with Marinade: While the salmon is baking, bring the reserved marinade to a low boil in a saucepan over medium heat, stirring frequently. Cook for about 3-5 minutes until slightly thickened.
