Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper (adjust to taste)

1 large egg

1/2 cup panko breadcrumbs

1/4 cup vegetable oil (for frying)

For the Hot Honey Sauce:

1/3 cup honey

1-2 tbsp hot sauce (adjust for desired spice level; sriracha or Frank’s RedHot recommended)

1 tsp apple cider vinegar

1/2 tsp smoked paprika

Pinch of salt

For the Bowls:

2 cups cooked jasmine rice (or brown rice)

1 cup steamed broccoli florets

1/2 cup shredded carrots

1 avocado, sliced

1/4 cup green onions, sliced

Sesame seeds for garnish (optional)

Instructions

Prepare the Chicken:

In a large mixing bowl, combine flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. In another bowl, beat the egg. Set up a dredging station with the flour mixture, egg, and panko breadcrumbs.

      Dredge the Chicken:

Dip each piece of chicken first into the flour mixture, then into the egg, and finally coat it with panko breadcrumbs. Ensure the chicken is well-coated for extra crunch.

          Fry the Chicken:

Heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken pieces in batches, ensuring not to overcrowd the pan. Fry for about 5-6 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

              Make the Hot Honey Sauce:

In a small saucepan, combine honey, hot sauce, apple cider vinegar, smoked paprika, and a pinch of salt. Heat over low heat, stirring until well combined and warm. Adjust the level of hot sauce based on your spice preference.

                  Assemble the Bowls:

In serving bowls, layer the cooked jasmine rice as the base. Top with fried chicken pieces, steamed broccoli, shredded carrots, sliced avocado, and green onions.

                      Drizzle and Serve:

Generously drizzle the hot honey sauce over the top. Sprinkle sesame seeds for garnish, if desired. Serve immediately and enjoy the explosion of flavors!
