Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

1 cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil for frying

For the Hot Honey:

1/2 cup honey

1-2 tsp red pepper flakes (adjust for heat preference)

1 tsp apple cider vinegar

For the Biscuits:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 tbsp honey (optional, for sweetness)

Instructions

Marinate the Chicken:

    - In a bowl, whisk together buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Submerge the chicken thighs in this marinade and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Prepare the Hot Honey:

        - In a small saucepan over low heat, combine honey, red pepper flakes, and apple cider vinegar. Stir until well mixed and warm. Remove from heat and set aside.

          Make the Biscuits:

            - Preheat your oven to 450°F (230°C).

              - In a large bowl, mix the flour, baking powder, baking soda, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

                - Gradually mix in the buttermilk (and honey if using) until just combined. Do not overmix.

                  - On a floured surface, gently roll out the dough to about 1-inch thickness and cut with a biscuit cutter (or a glass). Place the biscuits on a baking sheet lined with parchment paper.

                    Bake the Biscuits:

                      - Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.

                        Fry the Chicken:

                          - Heat vegetable oil in a deep skillet or frying pan over medium-high heat (about 350°F or 175°C). Remove the chicken from the marinade, allowing excess to drip off, then dredge in flour followed by panko breadcrumbs for extra crunch.

                            - Fry the chicken pieces in batches until golden brown and cooked through, about 6-7 minutes per side. Drain on paper towels.

                              Assemble the Dish:

                                - Cut each biscuit in half and place a piece of fried chicken on the bottom half. Drizzle generously with hot honey and top with the other half of the biscuit.

                                  Serve:

                                    - Enjoy your Hot Honey Chicken Biscuits while they are warm, garnished with extra red pepper flakes if desired!
