1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 cup all-purpose flour

1 tsp baking powder

1 tsp cayenne pepper (adjust for spice preference)

Oil for frying

For the Hot Honey:

½ cup honey

1-2 tsp chili flakes (adjust based on your spice level)

1 tsp apple cider vinegar

Pinch of salt

For the Biscuits:

2 cups all-purpose flour

1 Tbsp baking powder

½ tsp baking soda

1 tsp salt

½ cup cold unsalted butter, cubed

¾ cup buttermilk

Instructions

Marinate the Chicken:

    - In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and pepper.

      - Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

        Prepare the Hot Honey:

          - In a small saucepan over low heat, combine honey, chili flakes, apple cider vinegar, and salt.

            - Stir occasionally until warm and mixed well. Set aside to infuse.

              Make the Biscuits:

                - Preheat your oven to 425°F (220°C).

                  - In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

                    - Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

                      - Slowly add buttermilk, stirring until just combined.

                        Shape the Biscuits:

                          - Turn the dough out onto a lightly floured surface and knead gently for about 30 seconds until it comes together.

                            - Pat the dough into a 1-inch thick rectangle and cut out biscuits using a round cutter. Place them on a lined baking sheet.

                              Fry the Chicken:

                                - Heat oil in a deep skillet or frying pan over medium-high heat.

                                  - In another bowl, mix flour, baking powder, cayenne pepper, salt, and pepper.

                                    - Dredge each marinated chicken thigh in the flour mixture, shaking off excess flour.

                                      - Fry the chicken in hot oil for about 5-7 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

                                        Assemble:

                                          - Cut the biscuits in half and place a piece of fried chicken on the bottom half. Drizzle generously with hot honey.

                                            - Top with the other half of the biscuit and drizzle a bit more hot honey on top if desired.

                                              Serve:

                                                - Serve warm with your favorite sides and enjoy the deliciously spicy sweetness of your Hot Honey Chicken Biscuits!
