Honey Sriracha Salmon Bowls

For the Salmon:

4 (6 oz) salmon fillets

1/4 cup honey

2 tablespoons Sriracha sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

Salt and pepper to taste

For the Bowls:

2 cups cooked brown rice or quinoa

1 cup shredded carrots

1 avocado, sliced

1 cup cucumber, thinly sliced

1 cup edamame, cooked

1/4 cup green onions, chopped

Sesame seeds for garnish

Lime wedges for serving

Prepare the Marinade: In a small bowl, whisk together honey, Sriracha, soy sauce, rice vinegar, garlic, salt, and pepper until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.

      Cook the Salmon: Preheat your grill or oven (broiler) to medium-high heat. If grilling, place the salmon skin-side down on the grill, cooking for 4-5 minutes per side until the salmon flakes easily with a fork. If using the oven, place the salmon on a lined baking sheet and broil for 8-10 minutes or until cooked through.

        Prepare the Bowls: While the salmon is cooking, divide the cooked brown rice or quinoa among four bowls. Top each bowl with shredded carrots, avocado slices, cucumber, and edamame.

          Assemble the Bowls: Remove the salmon from the grill/oven and place one fillet on each bowl. Drizzle additional honey Sriracha sauce over the top if desired.

            Garnish: Sprinkle green onions and sesame seeds over each bowl for an added crunch and flavor. Serve with lime wedges on the side.
