Honey Pepper Chicken Mac and Cheese

Ingredients
  

For the Chicken:

2 boneless, skinless chicken breasts

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

Salt to taste

1 tablespoon olive oil

For the Mac and Cheese:

8 oz elbow macaroni (or pasta of your choice)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon mustard powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Prepare the Chicken:

    - In a small bowl, mix together honey, soy sauce, black pepper, garlic powder, paprika, and a pinch of salt.

      - Marinate the chicken breasts in the honey pepper mixture for at least 30 minutes (or overnight in the refrigerator for deeper flavor).

        Cook the Chicken:

          - Heat olive oil in a skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from skillet and let it rest before slicing into bite-sized pieces.

            Cook the Macaroni:

              - In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

                Make the Cheese Sauce:

                  - In the same pot, melt the butter over medium heat. Stir in the flour, whisking for about 1 minute to create a roux.

                    - Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens (about 5 minutes).

                      - Stir in the mustard powder, onion powder, salt, and pepper. Reduce heat and mix in the cheddar and mozzarella cheese, stirring until melted and creamy.

                        Combine:

                          - Add the cooked macaroni and sliced honey pepper chicken to the cheese sauce. Stir until everything is well coated.

                            Bake (optional):

                              - Preheat the oven to 350°F (175°C). If desired, transfer the mac and cheese mixture to a greased baking dish. Sprinkle breadcrumbs on top for a crunchy finish.

                                - Bake for 20 minutes or until the top is golden and bubbly.
