Ingredients
  

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh parsley or thyme, for garnish (optional)

Instructions
 

Prepare the Carrots: If using regular carrots, peel them and cut them into sticks, about 2-3 inches in length. If using baby carrots, simply rinse them under cold water.

    Blanch the Carrots: In a medium pot, bring water to a boil and add the carrots. Blanch them for about 3-4 minutes until they are slightly tender but still crisp. Drain and set aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Add Ingredients: Stir in the honey, soy sauce, and apple cider vinegar. Mix well and allow the mixture to simmer for about 2-3 minutes, letting the flavors meld together.

          Combine Carrots & Glaze: Add the blanched carrots to the skillet. Toss them in the honey garlic glaze until they are evenly coated. Cook for an additional 5-7 minutes, stirring occasionally, until the carrots are tender and the glaze thickens slightly.

            Season and Serve: Taste the carrots and season with salt and pepper as desired. Once done, remove from heat and transfer to a serving dish. Garnish with chopped fresh herbs like parsley or thyme if desired.
