2 cups rolled oats

1 cup almond flour

1/2 cup sliced almonds

1/2 cup honey

1/4 cup coconut oil (melted)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries (or other fruit of choice)

1/4 cup mini chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners for easy removal.

    In a large mixing bowl, combine rolled oats, almond flour, sliced almonds, cinnamon, and salt. Stir well to distribute all the dry ingredients evenly.

      In a separate bowl, whisk together the melted coconut oil, honey, and vanilla extract until well combined.

        Pour the wet ingredients into the dry mixture and stir until all the oats and almonds are fully coated.

          Fold in the dried cranberries and mini chocolate chips (if using), ensuring they are evenly distributed throughout the mixture.

            Scoop the granola mixture into the prepared muffin tin, filling each cup to the top and pressing down firmly to compact the granola.

              Bake for 15-18 minutes, or until the edges are golden brown.

                Remove from the oven and allow the granola cups to cool in the pan for about 10 minutes before carefully removing them.

                  Let the cups cool completely on a wire rack before enjoying or storing them. They can be stored in an airtight container for up to one week.
