Ingredients

For the Cookie Base:

1 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/4 teaspoon salt

2 teaspoons vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

For the Coconut Caramel Topping:

2 cups sweetened shredded coconut

1 cup caramel candies (or homemade caramel)

1/2 teaspoon sea salt

1 tablespoon milk (or coconut milk for extra flavor)

For the Chocolate Drizzle:

1 cup semi-sweet chocolate chips

1 teaspoon vegetable oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Make the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and salt until light and fluffy (about 2-3 minutes). Mix in the vanilla extract.

Add the Dry Ingredients: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the butter mixture, stirring until just combined.

Shape the Cookies: Roll the dough into small balls (about 1-inch diameter) and place them on the prepared baking sheets, leaving about 2 inches between each. Use your thumb or the bottom of a bottle to press down in the center of each ball, forming a small well.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheets for 5 minutes before transferring them to a wire rack.

Prepare the Coconut Topping: While the cookies are cooling, toast the shredded coconut in a dry skillet over medium heat, stirring frequently until golden-brown and fragrant (about 5-7 minutes). Remove from heat and set aside.

Melt the Caramel: In a small saucepan, combine the caramel candies and milk over low heat. Stir until smooth and melted. Add the toasted coconut and sea salt, mixing until well combined.

Assemble the Cookies: Once the cookies have cooled completely, spoon a generous amount of the coconut-caramel mixture into the center of each cookie, spreading it out evenly.

Make the Chocolate Drizzle: In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between until smooth. Using a fork, drizzle the melted chocolate over each Samoas cookie.

Let Set: Allow the chocolate to harden at room temperature or in the fridge for about 30 minutes before serving.

Enjoy your Homemade Samoas cookies with a glass of milk or a cup of coffee!
