Ingredients

10 fresh red chili peppers (e.g., Thai bird peppers or Fresno peppers, adjust according to spice level)

6 cloves of garlic, minced

2 tablespoons vegetable oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sugar

½ teaspoon salt

½ teaspoon sesame oil (optional)

1 teaspoon lime juice (optional)

Instructions

Prepare the Chilies: Remove the stems from the chili peppers and, if you prefer a milder sauce, remove the seeds. Chop them roughly.

Blend the Ingredients: In a blender or food processor, combine the chopped chili peppers, minced garlic, soy sauce, rice vinegar, sugar, and salt. Blend until you achieve a smooth paste.

Cook the Mixture: In a small saucepan, heat the vegetable oil over medium heat. Once hot, carefully pour in the chili-garlic blend. Cook, stirring frequently, for about 5-7 minutes until you can smell a fragrant aroma and the sauce thickens slightly.

Finish the Sauce: Remove the pan from the heat and let it cool slightly. Once cooled, stir in the sesame oil and lime juice if using.

Store the Sauce: Transfer the chili garlic sauce to a clean glass jar. Let it cool completely before sealing. Store in the refrigerator for up to 2-3 weeks.

Serve: Use this sauce as a condiment for dumplings, stir-fries, marinades, or as a spicy addition to any dish!
