1 lb boneless, skinless chicken breast, sliced into strips

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 cup chicken broth

1 cup sour cream

2 tbsp all-purpose flour

2 tbsp Dijon mustard

1 tsp paprika

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz egg noodles (or pasta of your choice)

Instructions
 

Prepare the Noodles: Cook the egg noodles according to package instructions. Drain and set aside, drizzling a little olive oil to prevent sticking.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the sliced chicken with salt and pepper, then add to the skillet. Cook until golden brown and no longer pink in the center (about 5-7 minutes). Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining olive oil. Sauté the chopped onion and garlic until softened and fragrant, about 3 minutes. Add the sliced mushrooms and cook until they release their moisture and become tender, about 5 minutes.

        Create the Sauce: Sprinkle the flour over the mushrooms and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste. Gradually pour in the chicken broth, stirring constantly until the mixture is smooth and begins to thicken.
