1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 medium onion, finely chopped

3 garlic cloves, minced

8 oz (225g) mushrooms, sliced (cremini or button)

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tbsp Dijon mustard

1 tbsp Worcestershire sauce

1 tsp paprika

2 tbsp olive oil

2 tbsp butter

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

12 oz (340g) egg noodles or pasta of choice, cooked according to package instructions

Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the sliced chicken, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil and butter. Add the chopped onion and cook until translucent (about 3-4 minutes). Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and have released their moisture (approximately 5-6 minutes).

      Combine Broth and Flavor: Pour in the chicken broth, then add the Dijon mustard, Worcestershire sauce, and paprika. Stir to combine, scraping any browned bits off the bottom of the skillet.

        Incorporate Sour Cream: Reduce the heat to low and mix in the sour cream until well blended. Return the cooked chicken to the skillet and stir to coat everything in the creamy sauce.
