For the Popcorn:

1 cup popcorn kernels (about 16 cups popped)

1 tablespoon vegetable oil (for popping)

For the Caramel:

1 cup unsalted butter (2 sticks)

2 cups packed brown sugar (light or dark, your choice)

1/2 cup corn syrup (light)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional Toppings:

A sprinkle of sea salt or flaky salt

1 cup peanuts or mixed nuts (for extra crunch)

Instructions
 

Pop the Popcorn:

    - In a large pot with a lid, heat the vegetable oil over medium heat. Add a few popcorn kernels to the oil and cover the pot.

      - Once those kernels pop, add the remaining popcorn kernels and cover the pot, shaking occasionally to prevent burning.

        - When the popping slows down (2-3 seconds between pops), remove from heat and pour the popcorn into a large mixing bowl. Set aside.

          Make the Caramel Sauce:

            - In a medium saucepan over medium heat, melt the butter.

              - Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring continuously.

                - Once it reaches a boil, stop stirring and let it boil for 4-5 minutes without stirring. The temperature should reach 300°F (hard crack stage) on a candy thermometer.

                  - Remove from heat and immediately stir in the vanilla extract and baking soda. The mixture will bubble up, so be careful!

                    Combine Popcorn and Caramel:

                      - Pour the caramel sauce over the popped popcorn in the mixing bowl. Using a spatula or large wooden spoon, carefully toss the popcorn to ensure it is evenly coated with the caramel.

                        Bake the Caramel Popcorn:

                          - Preheat your oven to 250°F (120°C).

                            - Line a large baking sheet with parchment paper. Spread the caramel-coated popcorn evenly on the sheet.

                              - Bake for 1 hour, stirring every 15 minutes to ensure even coating and prevent burning.

                                Cool and Serve:

                                  - Once baked, remove the popcorn from the oven and allow it to cool completely on the baking sheet.

                                    - If using, sprinkle with sea salt or add the mixed nuts while the popcorn is still warm.
