Ingredients

6-8 medium-sized apples (Granny Smith and Honeycrisp mix recommended)

1 cup granulated sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 tablespoon lemon juice

1/4 teaspoon salt

1 tablespoon unsalted butter (to dot)

1 package (14 oz) refrigerated pie crusts (or homemade pie crust recipe)

1 egg (for egg wash)

1 tablespoon milk

Instructions

Prepare the Apples: Peel, core, and slice the apples into thin wedges. In a large bowl, combine the apple slices, sugar, flour, cinnamon, nutmeg, lemon juice, and salt. Toss until apples are evenly coated. Let sit for 15 minutes to allow flavors to meld and juices to form.

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare the Pie Crust: If using a refrigerated pie crust, roll it out and fit one pie crust into a 9-inch pie dish. If making homemade dough, roll it out to about 1/8 inch thickness.

Fill the Pie: Pour the apple mixture into the pie crust, spreading it evenly. Dot the filling with small pieces of butter.

Top Crust: Roll out the second pie crust to fit over the filling. You can either cut slits in a lattice pattern or simply cover it whole. Seal the edges by crimping with a fork or pinching with your fingers. Cut a few slits in the top crust if not lattice to allow steam to escape.

Egg Wash: In a small bowl, beat the egg with milk to create an egg wash. Brush the egg wash over the top crust for a golden finish.

Bake the Pie: Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the apple filling is bubbling.

Cool & Serve: Once done, remove the pie from the oven and let it cool for at least 2 hours before serving. This cooling time helps the filling set.

Enjoy: Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or whipped cream on top.
