1/2 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

3 medium-sized apples, peeled, cored, and diced (about 2 cups)

1/2 cup raisins or chopped nuts (optional)

Oil for frying

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1/2 teaspoon vanilla extract (for glaze)

Prepare the Apples: In a medium bowl, toss the diced apples with a little cinnamon and sugar (optional) to enhance their sweetness. Set aside to allow the flavors to blend.

    Make the Dough: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, granulated sugar, and brown sugar until well combined.
